Cupcake Mania.

I'm not sure why I did this but I signed up to make 130 cupcakes and a wedding cake for Tasha's wedding. I thought I would be able to accomplish this by myself and in one day... what the *&%$ was I thinking??? Luckily my sweet in-laws let me use they're beautiful and very large kitchen to get all of the baking and frosting done. I have to give a very special shout out to Judy and Meagan for the hours of help that they gave me. They were there to wash my bowls, line cupcake pans, clean up, keep me sane, calm me down and even make me laugh every once and awhile. I will forever be in debt to them.
This would have been A LOT easier if so many things didn't go wrong, like...

1.My 9" round cakes stuck to the pan and were completely ruined resulting in a 2nd batch of wedding cake.
2.One of my cupcake pans burned the bottom of 2 dozen white cupcakes resulting in an emergency trip to Harmons for a new pan and another batch of white cupcakes.
3.I decided to try a new chocolate cupcake recipe which I deeply regreted later on. I doubled the batch and started sweating when I saw them spilling over the cupcake pans. This resulted in using another recipe (that I should have used in the first place) and wasting a ton of ingredients.

Other then that, the cupcakes turned out fabulous and the wedding cake even better! Tasha sent me a picture of how she wanted the cake to look and I think it turned out almost exactly like the picture. It's a 4 layered strawberry short cake with whip cream frosting. Delish!

Meagan and I were RUSHING to deliver everything on time and realized we hadn't taken any pictures. We grabbed my camera and took just a few pictures before getting on the road. Thanks Meg for making sure the cake arrived in tact and stayed cool enough.

Congrats to Tasha and Kevin on their marriage! I hope your special day was beautiful and your marriage even more beautiful. I'm glad I could be a small part of it all.


 The only shot of the wedding cake... not such great lighting.

 There was a banner on the cake in the picture Tasha sent me. We did our best to re-create it and did a pretty good job. The only difference is the font on the word "Love."

 Chocolate with chocolate frosting. The cupcake liners are pink and green flowers.

 Tasha requesed rainbow chip frosting... it's her favorite. I would have chosen something else but it wasn't my wedding.  =)

All loaded in Judy's BMW. There are more boxes on the back seat. 128 cupcakes total.




P.S- I will never do this ever again.

That is too funny! I did cupcakes for a wedding luncheon like 2 years ago! It sounded like fun, but let me tell you, I didn't want to see another cupcake for weeks. Blech. That was definitely not my calling in life ;)

Well you did a great job! It does sound completely stressful though! I didn't taste the cupcakes but the cake was yummy!

Yes! Annie's wedding - but we'll probably need at least 500. Those cupcakes look SO professional! They look just like the ones from 25 Main! I'm so impressed. I bet everyone loved them.
